INGREDIENTS

  • 1.5 cup almond flour
  • 2 cups erythritol
  • 6 tbsp butter
  • 4 eggs
  • 1/3 cup heavy cream
  • 1 tsp vanilla
  • 1 tsp lemon juice
  • 1 tbsp lemon zest

DIRECTIONS

  1. Pre-heat oven to 325F
  2. In a microwave-safe bowl, melt butter in microwave and mix almond flour and 1/2 cup erythritol
  3. Line a baking springform pan with the dough and bake for 10 minutes
  4. In a bowl, combine all the remaining ingredients and blend until smooth and creamy
  5. Pour on top of the crust in the baking pan and bake for 1.5 hours at 325F
  6. Remove, cover and slowly let it cool down for an hour
  7. Refrigerate and serve

You can garnish with caramelized lemon
