A simple recipe that is not only low carb and keto-friendly but is tasty and very nutritious at the same time. It can be either eaten on its own or added to a main entree to create a large meal.

INGREDIENTS

  • 1 lb bacon chopped
  • 1 cucumber diced
  • 1 cup quartered or sliced tomatoes
  • 1/4 cup seasoned rice vinegar
  • salt and black pepper to taste
  • 5 avocados
  • 1/2 cup cilantro
  • 4 green onions

DIRECTIONS

  1. Place bacon in a large skillet and cook over medium-high heat until both sides are browned. This will take 10 minutes. Drain afterwards on paper towel.
  2. Stir in remaining ingredient and combine. Serve

TIPS

Add other form of meats or meat leftovers as you desire

Spinache, arugala, peppers and leafy greens can be added to the recipe

Salad can be served warm of cold

Feel free to replace vinegar with favorite low sugar or low calorie dressing
