DRESSING

  • 1 tbsp olive oil
  • 1/4 cup lemon juice
  • 1 tbsp water
  • 1 tbsp vinegar
  • 1 tbsp chopped parsley
  • 1 tsp basil
  • 1 tsp minced garlic
  • 0.5 tsp oregano
  • 0.5 tsp salt
  • 0.5 lbs chicken breasts

SALAD

  • 2 Cups lettuce leaves, washed & dried
  • 0.5 cucumber diced
  • 1 Roma totato diced
  • 0.5 onion sliced
  • 0.5 avocado sliced
  • Sliced olives to garnish

DIRECTIONS

  1. Whisk together dressing ingredients in a large jug and refrigerate
  2. Use half the dressing as a marinade for the chicken for 30 minutes
  3. Mix the salad ingredients in a large bowl
  4. Grill the marinaded chicken on a pan or grill over medium-high heat until it is brown
  5. Let the chicken cool down for 5 minutes, slice and serve over salad along with the remainder of the dressing
