Grilled fish is very easy to make and provides high quality protein in the diet. It can be made into a weekly staple. It breaks the flavor profile of your diet as well so it can be a welcoming comfort food after consuming lots of other umami and salty foods.

INGREDIENTS

  • 1.5-2 cup Chicken or beef broth
  • 2 cloves garlic
  • 4 cups vegetables mix (broccoli, celery, peppers, carrots)
  • Salt & Pepper to taste

DIRECTIONS

  1. Heat broth, garlic and vegetables in a 3 quart pan over medium-high heat to boil.
  2. Reduce heat and simmer. Cook for 5 more minutes until veggies are crisp
  3. Drain and serve.

TIPS

You can vary the vegetables as needed, such as adding mushrooms and peas

You can also grill the vegetables if the meal all ready has the grill fired up.
